Sommelier Wine Tastings Inside the 400-Label Vault
Guided flights through one of Victoria's deepest cellars — from a gentle introduction to museum releases poured by the glass.
400 labels deep
Four decades of Australian icons plus old-world reserves.
Marcus hosts
Our head sommelier leads every session personally.
Max ten guests
Cellar tastings stay deliberately small — conversation, not lecture.
An evening underground
The tasting room sits inside the working cellar — fourteen degrees, candle-lit, surrounded by four hundred labels. Sessions run ninety minutes with eight wines matched to a theme you pick.
Beginners leave able to read a glass; collectors leave with allocations of bottles that never reach the public list. Both leave a little later than planned.

The tasting formats
Iconic Australia — $85
Six benchmark wines from Barossa to Margaret River with aged-cheddar pairings. The perfect first tasting.
Blind Flight — $120
Eight unlabelled pours and the sommelier's method for reading a glass with zero clues.
Old World Masters — $140
Bordeaux, Barolo and Rioja from the reserve list, decanted two hours before you sit.

How a tasting runs
Ninety minutes inside the vault — the rhythm of a session.
Settle in
A glass of something cold to start, introductions, and Marcus reads the room's level.
The flight

The pairing
Cheese, charcuterie or chocolate matched mid-flight to prove the point.
The reveal
Scores, verdicts and the list of what you just drank — plus the option to take bottles home.
