New Year at the house
December fills fast — Christmas lunches, end-of-year dinners and the New Year's Eve gala on the terrace with the fireworks over the Yarra.
- Group set menus from $145 pp through December

The table fills the middle of the room
Every Sunday from noon, the kitchen sends the roast to shared tables — carved in the centre, sides passed hand to hand, the way Sunday used to work.
This week's spread — $95 pp
- Whole roast rib of O'Connor beef, carved at the table
- Coal-roasted potatoes, seasonal vegetables, Yorkshire puddings
- Family-style dessert — quandong tart and house ice cream

Once a month the kitchen prints nothing. You book a time, sit down, and trust the pass — the menu is only revealed as each plate lands.

Monthly invitational evenings in the Mahogany Salon — high-limit play, a private chef's line and champagne that doesn't come by the glass anywhere else.

Our calendar is written by harvests, not by marketing — each season brings its own limited menu and event series.
Summer seafood
Raw bar season — towers, crudo nights and the terrace oyster bar open late.
Autumn harvest
Game, mushrooms and the first truffle dinners as the weather turns.
Truffle season
Manjimup black truffle across the menu — the year's most requested dinners.
Spring lamb
Flinders Island lamb, spring vegetables and the Melbourne Cup long lunch.
Open lab evenings
Twice a month, the fermentation room opens to guests — taste the misos, vinegars and chilli ferments that flavour the menu, months before they're finished.
$45 with a jar of house ferment to take home · 12 seats per session.
